I’m back on a salad kick. I go through phases where I like salad and then I don’t like salad. Let’s face it, salad is really not enjoyable without good dressing. Salad dressing is what makes the salad.
I have the hardest time finding a salad dressing that I like. I am very picky when it comes to seasoning and flavors. I prefer clean simple ingredients.
Most store-bought dressings have herbs, Italian seasoning or they are just creamy. There are always strong side flavors or a weird aftertaste.
About a week ago I got back on my salad kick and decided to toss a few ingredients together to make a homemade vinaigrette. I know I love balsamic vinegar, maple syrup and garlic. I just had to get the ratios right to make it taste good.

You will probably have most of these ingredients in your cupboards or fridge.
Ingredients:
1/8 cup Balsamic Vinegar
1/4 cup Olive Oil
1 tbsp Maple Syrup
1/2 tsp salt
Black pepper
1 Garlic Clove (use a garlic press if you have it)
Instructions:
Add all the ingredients into a mason jar or a container with a leak-proof lid. Shake until combined and the dressing looks homogenized.
I use a mason jar and a salad dressing lid. It has a nice pour spout and an air vent to allow the dressing to pour out smoothly.
Depending on how much dressing you use you will get either 2 to 3 servings out of this recipe.
This recipe is so easy and quick to toss together. It keeps good in the fridge for a few days which is why I like the small quantity.
All the vinaigrettes I have tried in the past are either too sour, too sweet or don’t combine well. I find this recipe to be perfect. The oil and vinegar take a long time to separate. If it does separate give it another shake and it’s good to use again.
