Vegan ice cream has become very popular in the last few years. I have tried so many but I’m never satisfied with the flavor or happy with the ingredient list.
So far every vegan or dairy-free ice cream has made my stomach hurt. I’m not sure what these ice creams have but they do not sit well with my stomach.
You can make it at home usually for a less of a price and cleaner ingredients.
I have seen many recipes and posts about homemade ice cream and vegan ice cream. I decided to try making my own version. It is not hard and you only need a few things to make this delicious ice cream. Nice cold, refreshing treat after dinner or any time really.
Honestly, I love ice cream so I can eat it at any time of the day. I could probably even eat it for breakfast. 🙂
All you will need is 4 ingredients, Â a blender and a little bit of patience.
Ingredients:
1 can of full-fat coconut milk, not coconut cream
1/2 cup maple syrup or any other liquid sweetener.Â
2 tsp vanilla extract
1 cup of frozen raspberries
Instructions:
The coconut milk should be frozen. Ice cube trays are great for this and the cubes will be small enough to blend easily.Â
Once you have the frozen coconut milk cubes add them to the blender along with the other 3 ingredients. Blend until smooth and creamy.
Serve immediately or save it in an airtight container in the freezers. If you freeze it you will have to take it out to thaw a bit prior to eating the ice cream.Â
I like topping my ice cream with fresh raspberries. Any fruit of your choice would be great. Also, sprinkles and cacao nibs would be amazing.
My local shopping mall has soft-serve ice cream. The kind you walk up to, grab a cup and dispense your own ice cream and then they weight it for you. There is an option of different flavors or you can do a mix that combines the two closest flavors for you.
Every time I go there I get the strawberry and coconut mix. This homemade ice cream is so similar in flavor and texture. I know this is raspberry but it reminds me of the mall ice cream so much.
