Healthy Pancakes

Who loves pancakes? I DO. I think everyone loves pancakes but they are not always the best for your waistline.

I recently started logging my meals into Myfitness pal and if you have used the app you know pancakes are not something that fits into your daily calorie intake. I was on a mission to come up with pancakes that can satisfy that Sunday morning craving and allow me to have more than 1 meal in a day.

I heard people making pancakes out of egg and banana only but that did not sound appealing to me. I personally don’t like the flavor of cooked banana so as I tried different things it just wasn’t that right consistency and flavor to satisfy my pancake craving.

Staring at my pantry with the door open trying to figure out how to fix the consistency and flavor, and there it was. OATS. Plain old fashioned OATS.

Quickly I went to work. Combining banana, eggs, oats and vanilla extract. My favorite flavoring in the entire world. Vanilla makes everything taste good. I mean everything.

Voila, that moment when you think you invented something unheard of. LOL

The recipe calls for a few simple ingredients. Most people will have these items in their kitchen already. No need to run out for a shopping spree.

You will need:

1 very ripe banana

2 eggs

2 tbsp oats

Splash of Vanilla (about 1/4 tsp or whatever you like)

Cooking spray (I use canola oil)

Instructions:

Add the banana, oats, eggs, and vanilla into a blender and blend away. Another trend in my recipes, the blender.

Heat your pan over medium heat, spray the pan with cooking oil and put 1/4 cup of pancake batter onto the pan. When the pancake starts to bubble, flip it and cook another minute or so. You should end up with 4 perfectly browned pancakes. 

This recipe has 303 calories depending on the banana size and brand of eggs without syrup. I counted for a large banana. I like to eat my pancakes with maple syrup and most syrups are about 50 calories a tablespoon. Banana makes these pancakes pretty sweet so you don’t need much syrup.
