I love having parfaits for breakfast. It is an easy, delicious, refreshing one dish meal. Don’t forget pretty. I like pretty food.
This peach chia breakfast parfait is very easy to make and only 5 ingredients. My parfaits are always layered in a clear glass so I can see all the layers.
Start out by mixing the yogurt with the chia seeds. I used peach yogurt but you can use any flavor you like. Allow the chia seeds to absorb some of the moisture from the yogurt (about 5 minutes) and then start layering all the ingredients.
First layer is the yogurt chia mix, then add half the hemp seeds, half the peaches and quarter of the pomegranate seeds. Repeat the same step for the next layer and you will have a beautiful, colorful, refreshing breakfast. I like adding majority of the pomegranate seeds to the very top to give a pop of color. Place it in the fridge overnight and you will have a perfect ready to go breakfast waiting for you when you wake up.

Ingredients:
1/2 cup diced Peaches in natural juice
1 tbsp Chia seeds (Terrasoul Superfoods)
1 tbsp Hemp seeds (Nutiva brand)
2 tbsp frozen pomegranate seeds
4 oz Peach yogurt
The whole parfait has 300 calories, 11 grams of protein and 7 grams of fiber.
